Perfect for busy weeknights, meal prep, or adding an easy veggie to your plate.
Ingredients
- 1.5-2 cups chopped broccoli florets
- 1-2 Tbsps Avocado oil (or your favorite oil)
- 1 Tbsp Nutritional yeast
- 1-2 tsp Black pepper
- 1/4 cup Shredded parmesan, evenly spread
Instructions
- Preheat oven to 425°F.
- Add chopped broccoli florets to a mixing bowl. Drizzle with avocado oil and toss until evenly coated.
- Sprinkle on nutritional yeast, black pepper, and shredded parmesan. Toss again to combine.
- Spread broccoli into an even layer on the baking sheet.
- Roast for 15-20 minutes or until the broccoli is tender with crispy, golden edges.
Ingredient Notes
Try to cut the florets into similar-sized pieces so they cook evenly.
Avocado oil works great because of its high smoke point, but olive oil or another favorite cooking oil works too.
Nutritional yeast adds a savory, cheesy flavor while keeping the ingredient list simple. If you’ve never used it before, it’s an easy way to boost flavor in roasted vegetables.
The parmesan helps create those crispy golden bits while adding extra flavor.
