Gingerbread No-Bake Bites
These Gingerbread No-Bake Bites are one of my favorite easy holiday snacks. They’re quick to make, full of cozy gingerbread flavor, and perfect to keep in the fridge so you have something nourishing available when hunger shows up, especially during the holiday season when meals and snacks can feel less predictable.

Gingerbread No-Bake Bites
Ingredients
1 ¾ cups old-fashioned oats, ground into flour (use a blender or food processor)
2 Tbsp ground flaxseed (optional, for extra fiber)
1 ½ tsp ground ginger
1 tsp cinnamon
¼ tsp nutmeg
1/2 tsp cloves
¼ tsp salt
⅓ cup peanut butter
2 Tbsp molasses
2–3 Tbsp maple syrup or honey, to taste
1 tsp vanilla extract
1–2 Tbsp water, if needed
Directions
Make oat flour: Add oats to a blender or food processor and blend until finely ground (a few small pieces are okay).
Mix dry ingredients: In a medium bowl, stir together the ground oats, flaxseed, ginger, cinnamon, nutmeg, cloves, and salt.
Add wet ingredients: Stir in peanut butter, molasses, maple syrup, and vanilla until a dough forms.
Adjust texture: If the mixture feels too dry, add 1–2 tablespoons of water until it comes together easily.
Roll: Scoop about 1 tablespoon of dough and roll into bite-sized balls.
Chill: Place on a parchment-lined plate and refrigerate for at least 20 minutes to firm up.
