3 Overnight Oats Recipes You'll Actually Look Forward to Eating
If you're trying to eat more consistently and have better energy, mornings can be one of the hardest times to make this happen. Between getting ready for work, classes, or taking care of your family, breakfast often gets pushed to the bottom of the priority list.
That's where overnight oats come in.
They're one of my favorite meal prep breakfasts because they're:
Quick to make
Easy to customize
Full of fiber for lasting energy
Delicious cold or warmed up if that's your preference
Even better? You don't need a different grocery list for every recipe.
These three overnight oats recipes use many of the same pantry staples, making meal prep simple while still giving you variety throughout the week.
The Base Ingredients
Each recipe starts with a similar foundation:
Old-fashioned rolled oats
Ground flaxseed
Milk of choice
A jar or glass meal prep container
From there, you can easily switch up the flavors without buying a long list of ingredients.
1. PB&J Overnight Oats
A nostalgic favorite that tastes like the classic sandwich, but in breakfast form.

PB&J Overnight Oats
This simple breakfast is perfect for meal prep while bringing together the classic flavors of peanut butter and jelly. Packed with flavor, fiber, protein, and healthy fats, these overnight oats will keep you feeling full, satisfied, and energized all morning.
Ingredients
- ½ cup rolled oats
- 1 Tbsp ground flaxseed
- ¾ cup milk of choice
- 1-2 Tbsp peanut butter
- 1–2 Tbsp jelly or jam
- ¼ cup strawberries, chopped
- Optional: drizzle of honey or maple syrup
Instructions
- In a jar or glass container, mix oats, flaxseed, and milk.
- Stir in peanut butter until combined.
- Cover and refrigerate overnight (or at least 4 hours).
- In the morning, top with jelly and strawberries.
- Stir gently and enjoy!
Notes
Optional Swaps:
- Use chia seeds instead of flax
- Swap strawberries for raspberries or blueberries
- Try almond or sunflower seed butter
2. No-Bake Cookie Overnight Oats
If you love chocolate and peanut butter together, this one tastes like dessert while still helping you start the day with a balanced breakfast.
Ingredients
½ cup old-fashioned oats
1 tablespoon ground flaxseed
½ cup milk of choice
1 tablespoon peanut butter
1 tablespoon cocoa powder
Directions
Mix all ingredients together until smooth.
Refrigerate overnight and enjoy cold or warm before eating.
Optional toppings: chocolate chips, sliced banana, or an extra drizzle of peanut butter.
3. Cheesecake Overnight Oats
Creamy, fruity, and one of my personal favorites.
The instant cheesecake pudding mix gives these oats their rich cheesecake flavor. You can use the regular or zero-sugar version depending on your preference.
Ingredients
½ cup old-fashioned oats
1 tablespoon ground flaxseed
½ cup milk
2 tablespoons cheesecake-flavored instant pudding mix
¼-½ cup berries
Directions
Mix all ingredients together until combined.
Refrigerate overnight and top with additional berries before serving if desired.
These are delicious cold but also warm up surprisingly well in the microwave.
