Blueberry Oatmeal Muffins

If you’re looking for something simple to prep ahead for breakfasts or snacks this week, these blueberry oatmeal muffins are an easy one to add to the rotation.

They’re made with simple ingredients like oats, blueberries, eggs, and milk, and they have just enough sweetness from honey or maple syrup without being overly sweet.

I love recipes like this because nourishing yourself doesn’t have to mean making an elaborate meal from scratch every day. Sometimes it looks like spending a little time in the kitchen once so you have something easy to grab later in the week.

And if you want to make them a little more filling for breakfast or a snack, you can pair a muffin with another food that sounds good to you.

For example:

  • A blueberry oatmeal muffin + Greek yogurt

  • A muffin + peanut butter

  • A muffin + a hard-boiled egg

  • A muffin + fruit and a handful of nuts

Make Them Work for You

Try using:

  • Fresh or frozen blueberries

  • Honey or maple syrup

  • Your favorite type of milk

  • Whole-wheat flour or a combination of whole-wheat and all-purpose flour

And if you have extras, store them in the refrigerator for up to a week or freeze them for up to 3 months. Warm one in the air fryer for 2-3 minutes or microwave for 15–30 seconds at a time when you're ready to enjoy it.
